The cheese with a unique texture (also known as the ‘squeaky cheese’). Halloumi is a Cypriot semi-hard, unripened brined cheese made from a mixture of goats and sheeps milk and sometimes cows milk. It has a salty and tangy taste with a bouncy texture and when cooked, the milk sugars in the cheese caramelise on the outside giving it a sweet taste. Often enjoyed alongside fresh fruit or vegetables, thanks to it being the only cheese that does not melt when heated, it is also excellent cut into thick slices and barbequed or fried.
