How it’s made

Mozzarella’s distinctive characteristics are achieved through a traditional method known as “pasta filata”. This involves heating the milk, adding rennet to coagulate it, and then stretching and kneading the curds until they become smooth.

The cheese is then cut, shaped, brined, and carefully packed, always best eaten as fresh as possible. However, for convenience and to lock in that fresh goodness for longer, many formats are also available frozen and IQF.

Mozzarella is almost always made with pasteurised milk and vegetarian rennet, most commonly with cow’s milk. Buffalo milk mozzarella, notably the PDO version Mozzarella di Bufala Campana, proudly hails from specific regions where the product originates.
