Greek yogurt and feta dip with peppers and a bottle of extra virgin olive oil from Crete

How it’s made

The signature thick, velvety texture of true Greek yogurt comes from the straining process that removes much of the whey and is the key difference between authentic Greek yogurt and ‘Greek-style’ yogurts. The characteristic tanginess is a result of the bacterial cultures used during fermentation, which produce lactic acid – key to the great flavour.
