How it’s made

Because Reduced Fat Salad Cheese isn’t covered by a PDO, its making process and ingredients can be more flexible.

Reduced Fat Salad Cheese is often made mainly with cow’s milk, which gives it that milder flavour. However, for a more complex profile, goat and/or sheep’s milk or cream can be added. Like other Salad Cheeses, it’s brined to get that subtle tangy taste, but it isn’t aged for the long periods that feta requires.
