Burrata and stracciatella are both cherished Italian cheeses, closely related yet wonderfully distinct.
Burrata is a fresh, handcrafted cheese featuring a soft mozzarella outer layer that encases a luscious, creamy interior of stracciatella. Stracciatella itself is that delightful, creamy filling, made from shredded mozzarella soaked in fresh cream.
Predominantly made from cow’s milk, though occasionally from buffalo, both are vegetarian-friendly.
These cheeses offer truly versatile use, bringing a touch of culinary theatre, especially when a burrata is cut open in cold dishes. However, they can also be used in hot preparations too! Burrata is typically sold as a ball in brine, while stracciatella comes in a convenient tub.

Both burrata and stracciatella offer a creamy, rich flavour that’s milky, buttery, and wonderfully mild with a fresh taste. Burrata provides a delightful contrast: a firm yet soft outer layer of mozzarella enclosing that wonderfully creamy, oozy stracciatella interior.
This makes them fantastic for both hot and cold uses: they’re great as a topping for pizza and pasta (or even mixed in for a creamy pasta sauce!) and make a magnificent centrepiece for vibrant salads. Pair them with other flavourful ingredients like pesto, juicy tomatoes, and sweet figs for an unforgettable experience.


How it’s made

Stracciatella, the creamy filling, is made from shredded mozzarella soaked in fresh cream.
Burrata is then individually handcrafted into a pouch of mozzarella, which is carefully filled with this mixture of cheese curd called stracciatella.
Once formed, the burrata is typically cooled in cold water to ensure it remains perfectly sealed and firm.
Both are made with pasteurised milk and are vegetarian, making them accessible for many to enjoy.

Did you know…?
The name “stracciatella” means “little shreds,” referring to the shredded mozzarella within the cheese.
Interestingly, the ice cream flavour stracciatella gets its name from the strands of dark chocolate in the vanilla ice cream, not the taste of the cheese itself!
