How it’s made
Rooted in Cypriot tradition
Halloumi production is deeply rooted in Cypriot history. Traditionally, sheep and goats were the primary source of milk on the island due to the terrain. However, the growing popularity of Halloumi led to the introduction of cow’s milk to meet demand, creating the blend that is most commonly used today.
The product always sees the addition of mint, included either as flakes or a whole mint leaf within the centre of the cheese. Halloumi achieves its unique firm texture and high melting point thanks to a specific cooking process used during its production.
