Winter is upon us, the cold days and nights leave us wanting to get comfy and cosy. What better way that with a heathy, tasty recipe? Great as a snack, lunch, side dish or starter – warm cauliflower with whipped Salad Cheese and golden raisins. A light meal with plenty of taste and character.
• 400g Salad Cheese
• 50ml whipped cream
• 2tbsp wholegrain mustard
• 1tsp acacia honey
• 100g golden raisins
• Zest from 1 lemon
• 4 cloves of garlic, crushed
• 1 cauliflower
• 1 romanesco or broccoli
• 100g capers including brine
1, Whip the cheese and the cream, lemon zest and crushed garlic in a bowl until completely smooth. Keep this in the fridge until ready to use.
2, Cut the cauliflower and romanesco into bouquets and place in a bowl. Pour over hot salted water and leave to soak for approximately 4 minutes, then drain.
3, In the meantime, Mix the capers, capers brine, acacia honey and mustard in another bowl then set aside.
4,Drain the bouquets and then place a frying pan over a medium heat and add in a tbsp. of vegetable oil. Sauté the cauliflowers, turning regularly, in the pan for 2-3 minutes. Season these with salt and pepper to taste.
5, Remove the pan from the heat and then pour the capers dressing over the bouquets, turning them to cover.
6, Serve on a dish with a generous sprinkle of raisins and a dollop of whipped salad cheese from the fridge.
And voila, something light yet warming for the winter months.
